Slim Chick Salad
Chickpeas are low in calories and high in protein so are great to help control your weight.
Breastfeeding women have been eating chickpeas to make more breast milk since the ancient Egyptian times.
The dark leafy greens in this salad are also said to have a positive effect on breast milk.
Chicken is a good source of tryptophan, important for making your mood boosting serotonin.

Ingredients
- 1 cup chopped or diced chicken breast (option: buy pre-roasted to save time)
- 1 & 1/2 cup drained rinsed tinned chickpeas
- 1 & 1/2 cup sliced red pepper (medium)
- 1/2 cup crumbled feta cheese
- 1 tbsp balsamic vinegar
- 1 tbsp extra virgin olive oil
- 5 cup loosely packed rocket or spinach
Method
- Poach (boil) chicken in water until the centre is cooked and set it aside to cool. Option to buy a pre-cooked roasted chicken to save time.
- Shred the chicken and combine with the chickpeas and peppers in a large bowl.
- Add the balsamic vinegar and olive oil to chicken mixture and put on top of the rocket on the plate.
- Crumble feta over the salad and serve.
