Delicious Chia Parfait Recipe
This is a delicious healthy alternative to the traditional parfait. With coconut and berries, this needs nothing sweet on top and you still have the delicious mix of sweet creaminess. In warmer weather, you can also prepare it ahead of time and set it in the freezer to chill. We love all the superfoods in this recipe!

Calories: 280 per serve
- 2 tbsp chia seeds
- 3/4 cup low-fat yoghurt or coconut yoghurt if you are vegan
- 2/3 cup blueberries, frozen or fresh
- Optional: 1/4 cup desiccated coconut
1. Put the blueberries in a pretty glass, jam jar, or bowl...these can be fresh or frozen.
2. Mix the yoghurt and chia seeds (plus optional coconut) together and serve over top of the berries.
