Healthy Pita Pizza
These quick and easy pita pizzas make a delicious colourful meal that the whole family will enjoy!
Serves 2. Multiply the ingredients to make more.
- 4 wholegrain pitas (small)
- 2 & 1/2 tbsp pesto
- 4 tsp extra virgin olive oil
- 1 & 1/4 tsp fresh rosemary
- 1/8 unpeeled egg plant
- 1/2 cup sliced zucchini (medium)
- 1/3 yellow pepper (medium)
- 2/3 cup shredded rocket
- 1/8 cup pine nuts
- 2 & 1/2 tbsp parmesan
- Preheat the oven to 180C and slice the vegetables very thinly.
- Brush the pitas with olive oil and then spread the pesto over them thinly.
- Sprinkle on the chopped rosemary and add slices of egg plant, zucchini and pepper.
- Top with parmesan and pine nuts before putting in the oven for 15 minutes.
- Once the cheese has melted take them out of the oven and add the rocket leaves.
- Season with a drizzle of olive oil, salt and pepper and serve.
